中文摘要：	小麦制粉业是古老的行业，百多年来所形成的以磨、筛、清为主机的制粉设备和工艺传统基本上得以延续；但随着世界经济发展科技进步的历史进程，许多高科技手段已成功应用于这一传统工业。世纪之交，各大洲相继新建或技改的面粉厂，采用了新设备、新技术，特别是对成品面粉的安全卫生要求更加严格。通过介绍、观察和分析这些新技术的特点，有助于推动我国小麦制粉工业的技术进步和缩小与国际先进科技水平的差距。
英文摘要：	“Tradition and innovation”,those two words show the science-technology developing trends in flour milling industry in the world.It means,in one hand,the roller-mill,plansifter,and purifier are still the traditional milling machines,on the other hand,much of the innovative achievement also introduced and utilized into the old milling industry.A brief information review is quoted here,hopefully it would be as the reference for Chinese millers.
